Every spread needs a small dish, somewhere for the almonds, the olives, the dipping sauce that would otherwise run loose across the board. The Missouri Mountain tray is cut from a single solid piece of hard maple or American walnut, one chamber an inch deep, with no glue lines and no seams to trap anything. Named for the Collegiate Peaks fourteener whose long approach rewards good fuel, it earns its place next to every board you own.
Cut from one piece
A dish this size is usually glued up from offcuts. This one is machined out of a single solid block of hard maple or American walnut, so the grain runs continuous from rim to floor. No glue lines to separate over time, no seams to darken or hold onto what you served last. The piece you see on the outside is the same piece holding the inside.
Smooth after the first wash
Raw wood swells the first time it meets water and comes back rough. We get ahead of it: the grain is deliberately raised with moisture partway through sanding, then cut back flush, so the fibers that would have lifted on you are already gone. A penetrating food-grade mineral oil goes on after that, soaking into the wood rather than sitting on top of it. It stays smooth from the first wash forward.
Not only for company
It comes out when guests do, but it earns its keep the rest of the week: pistachios beside the laptop, olives while you cook, capers and lemon zest lined up before the pan goes on. Small enough to live on the counter, and finished well enough that you want to.
