Cut every day

Bread gets cut on whatever's closest, and the counter shows it. The Mt. Sherman Breadboard is a 16 by 7.5 inch cutting board in solid hard maple or American black walnut, cut from one continuous piece with no glue lines to split or trap crumbs, and sized for a daily loaf, a wedge of cheese, or the onion that needs slicing before dinner. A handhold at one end carries it from the counter to the table. Named for the Mosquito Range fourteener east of Leadville that nearly anyone can summit, it's built for the same kind of everyday use.

One board, one piece

Most cutting boards are glued up from strips. The Mt. Sherman Breadboard is cut from a single continuous piece of hardwood, so the grain runs unbroken from end to end. No glue lines to open up after a year of washing, no seams for crumbs and moisture to work into. What you're cutting on is the same piece of wood all the way through.

Smooth after the first wash

Raw wood swells the first time it meets water and comes back rough. We get ahead of it by raising the grain with moisture partway through sanding, then cutting it back flush, so the fibers that would have lifted on you are already gone. The finished board is soaked in food-grade mineral oil rather than wiped with it, so the oil goes deep into the wood instead of sitting on top.

Light enough for every day

At three quarters of an inch thick it's light enough to grab one-handed and heavy enough to stay put under a serrated knife. Sixteen inches takes a full boule or a halved baguette with room on either side, or a spread of cheese and cured meat carried out as a serving board. The handhold at one end carries it from counter to table loaf and all, and hangs it on a hook when the meal is done, so it dries on both faces instead of lying flat on a damp counter.
